Weekend Recipe – Khloe’s Buttermilk Fried chicken from Kris Jenners Cook book.

I received a few cook books for my birthday and Kris Jenner’s was on of them. I have a big collection of cook books on my shelf and i love getting unusual one’s. Kris Jenner isn’t know for being a chef but i just had to have it in my collection. I will be reviewing all my new cook books as soon as have made a few recipes from each, stay tuned! This recipe is the perfect treat for the end of a busy week. Serve with your favourite movie and your night is sorted!


Khole’s Buttermilk Fried Chicken – Serves 4 

You will need..

One 3 1/2 pound chicken cut into 2 drumsticks,2thighs,2,wings and 2 chicken breast haves

2 cups Buttermilk

1 tablespoon Kosher salt

1 1/2 teaspoons sweet paprika

1 1/2 teaspoon freshly ground black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper

1 cup all purpose flour

Vegetable shortening

What to do…

Combine the chicken pieces and the buttermilk in a gallon plastic storage bag and refrigerate for at least 8 hours. Drain the chicken in a colander. In a small bowl, mix together the salt,paprika,black pepper,garlic powder,onion powder and cayenne. sprinkle over the chicken tossing to coat the chicken evenly. Put the flour in a paper bag . One at a time, shake the chicken in the flour to coat (shaking off the excess flour), and then place on a large baking sheet. Let the chicken stand for 15 minutes to help set the coating.

Over a high heat, melt enough shortening in a large 12 inch deep skillet, to come halfway up the side of the skillet and heat until a deep-water (candy) thermometer reads 360F. Add the drumsticks,thighs abd wings to the pan (they should bubble immediately in the oil). Cook over high heat, adjusting the heat as needed so the oil bubbles Staedily abd maintains a temperature of around 325F turning the chicken occasionally, until the chicken is a beep golden brown and an instant-read thermometer inserted in the thickest part of the thigh-reads 170F, 12 to 15 minutes. Using thongs,transfer the chicken to a wire cake rack set over a rimmed baking sheet to drain.

Returned the oil temperature to 360F. Repeat with the chicken breastfeeding halves. Serve the chicken within a couple of hours of cooking. Do not refrigerate.

I served the chicken with a small salad and a small handful of skinny fries! Enjoy!
