Leek & Potato Soup

Hello! If you have read my last post where I talk about new year resolutions then you would know I’m starting to eat healthier. Im not calling it a diet or cutting anything out I’m just making an effort to think about what I eat and making better choices! For the past year I have ben making my own soups and I have really fell in love with it. They are super easy, tastes amazing and are really healthy! I make a big batch at the beginning of the week s its all ready for the week ahead.

  • 40g butter
  • 4 leeks, trimmed and sliced
  • 200g potatoes ( peeled weight), sliced
  • 750ml hot veg stock from 1 stock cube
  • single cream

Melt the butter in a large saucepan. Add the leeks and potatoes and stir t coat. Cover and leave to cook over a low heat for 10 minutes, stirring occasionally.

Add the stock, cover and simmer for 20 minutes, then puree with a hand held blender.

Return the pan to the heat and stir in the cream, cook on a low heat till hot not boiling. Then serve.

To serve with your soup you can make some home made croutons!

  • 100g ciabatta or other bread, 2-3 day old
  • 2tbsp olive oil

Heat the oven to 190c/170c Fan/gas 5. Cut the brea into cubes and toss in the olive oil until all the pieces are coated. Season and put on a baking tray. Bake for 10 minutes. Then sprinkle on the top of your soup once served!!
