Coming up with new, healthy lunch ideas can be kind of a pain! Ham sandwiches can getting pretty boring. This recipe is super easy and only take around 10 minutes to make. Serve with a mixed salad and a lemon mayo!
- 2 whole avocados mashed
- 2 large spoonfuls of mayo
- 2 tins of salmon
- Half a garlic glove minced
- grate cheddar cheese
- oil to fry
Mix together al the ingredients and add salt and pepper to taste then give it all a good mix. Heat a large non stick pan on high heat oil is hot. Then fry in batches turning over half way to colour both sides. They only need around 4 minutes!
Once cooked place on some kitchen towel to drain any excess oil.
