Mince pies are a christmas classic and I make them every christmas eve it’s become a tradition, this year I fancied a change. I found a recipe for a Mince pie tart, Iv made a few changes to the recipe to fit my taste and I thought I would share it with you. I can’t wait to make christmas eve!
2x 411g jars mincemeat
Just roll desert short crust pastry
Icing sugar to decorate
Roll out your just roll pastry to cover the bottom of your baking tin, keep some for later to make your snowflakes.
Place in a pre heated oven (200c fan 180c) place a baking tray in the oven to heat up.
Blind bake for 20 minutes with your tin sitting on the pre heated backing tray. After 20 minutes take the backing beans out and cook for a further 10 minutes. Then set aside to cool slightly.
Mean while using the left over pastry cut out your snowflakes (us different sized cutters )
Cover the pastry case with the mince meat and top with your pastry snowflakes.
Sprinkle the snowflakes with granulated sugar bake for 30-35 minutes or until the snowflakes are lightly golden.
Serve warm or cold with a vanilla whipped cream.
