Cast Iron Chicken Pot Pie

My Lodge cast iron skillet has become my kitchen staple, from steak and sausages to roasting potatoes it cook’s everything perfectly! This week I wanted to try a few new recipes, today I’m shearing my favourite Chicken Pot pie recipe! Chicken pot pie is one of my favourite food’s it’s so comforting and perfect for this cold weather!

What you will need

1 tablespoon olive oil
1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
1 medium onion, chopped
1 (16-ounce) bag frozen peas and carrots
2 cloves garlic, minced
2 cups low-sodium chicken broth
3 tablespoons all-purpose flour
1/2 cup whole milk
Freshly ground black pepper
1 store-bought pie crust, thawed if frozen

Preheat the oven to 400°F.

Heat olive oil in a 9 or 10-inch cast-iron skillet over medium-high heat. Add the chicken, season with salt and pepper, and sauté until cooked through, 5 to 6 minutes. Transfer the chicken to a plate.

Add the onion to the skillet. Sauté until tender and lightly browned, 3 to 4 minutes. Add the peas and carrots and garlic and cook 1 minute more. Sprinkle in the flour and stir until the flour dissolves. Add the chicken broth, bring to a simmer, and stir until thickened, 8 to 10 minutes. Turn off the heat, stir in the milk, and season as needed with salt and pepper.

Add the chicken to the skillet and stir to combine. Unfold the pie crust and place over the top of the filling, tucking the excess edges inside the pan. Use a sharp knife to cut 4 (1-inch) slits in top of the crust to vent. Bake until the crust is golden-brown, about 20 minutes.

Recipe Notes

Decorating : Us leftover pastry to decorate the top of the pie, I went for a festive theme. Remember to use a wicked up egg to glue them to the pastry!
Storage : Leftovers can be refrigerated for up to 3 days.

My yummy chocolate marble bundt cake!

Chocolate Marble cake is on go my all time favourites to bake and eat! When I was little my grandma made chocolate marble cake all the time so this is my take on her classic!

I love my bundt cake tin, so I try and use it as much as I can, what I love about using it is that it doesn’t matter if you don’t have loads of time to decorate because bundt tins are known for having extravagant designs and pattens so they will always look like a show stopper!

You will need..

180g butter softened, plus extra for greasing
225g caster sugar
¾ tsp vanilla extract
2 tsp baking powder
180g plain flour
3 large egg
2 tbsp milk
3 tbsp cocoa powder mixed with 3 tbsp hot water to make a paste
100g dark chocolate chip
30g icing sugar, to dust
1½ l (or bigger) bundt cake tin.

Heat the oven to 180C/160C fan/gas 4. Thoroughly brush a 1.5 litre bundt tin with melted butter. Cream the butter and sugar together until light and fluffy. Stir in the vanilla extract.
Mix together the baking powder and flour. Beat in one egg at a time, adding a spoonful of the flour mixture in between. Repeat until all three eggs have been added, then fold in the remaining flour mixture and stir in the milk.
Spoon half of the cake batter into a separate bowl and mix in the cocoa paste. Add the chocolate chips to the other half of the mixture. Add spoonfuls of each of the batters alternately to the tin and drag the handle of a teaspoon through the mixture to create a marbled effect.
Bake for around 40 minutes and then test the cake to see if a skewer inserted into the deepest part comes out clean.

The cake will take 40 – 50 mins, depending on the proportions of your bundt tin.
Let the cake cool in the tin for 10 minutes before turning out onto a cooling rack. Once cooled, dust the cake with a little icing sugar.

If you are feeing in the mood to decorate melt some dark chocolate over a banmary, once cool drizzle over the the top of the cake.

Then grab a hot chocolate, put on your favourite christmas movie and relax!

Home Alone Christmas Jumper

Hi guys!! Ok so this is a quick post about a new Christmas Jumper  I brought for myself just a few days ago! I have been wanting a Home Alone jumper for so long but the only one I could find was from the US with a very expensive shipping fee. That was until I saw this one, it’s from Primark for just £10 compared to other clothing items iv brought from them before this jumper is amazing guilty and super cozy! If you love Home Alone as much as me then treat your self before they are all gone!

“November ” favourites

I can’t believe we are already in the last month of 2015 and it will soon be Christmas. November for me is a long month as my excitment for Chrismtas starts at the end of October it feels like it takes forever!

My first favouite of Novemver is my new christmas jumper! If you follow me on Instagram then you would have seen my post. I brought it at H&M for £14.99. I first saw it in Glamour magazine and I just new I had to have it! #EflieSelfie

My next favourite are my new Dino slippers from Asos, they are again £14.99 and I love them!! They are so fun and really good guilty!

Subscription of the month – Bright paper packages out of all the boxes I have received BPP wins hands down from the way it was packaged to the contents, I loved this box!

Lastly its my new favouite drink, Last month I told you about the Nescafe Gingerbread latte well I have now started to love the Nescafe Mint Mocha its heavenly!

Christmas Cookies

For me cookies are a must for this time of year, they go perfect with a mug of hot chocolate on Christmas Eve. But I can’t wait that long to make and eat them so I make batches throughout the Christmas session. I have always wanted to make the perfect cookies and with this recipe they are perfect every time!

You can make these cookies a variety of ways, you could go simple by just adding chocolate buttons or for a festive touch you could add green and red smarties.


You will need…

125g butter, softened                                           100g light brown sugar

125g caster sugar                                                   1 egg, lightly beaten

1 tsp vanilla extract                                             225g self-raising flour

100g of Buttons or Smarties

You could even use Terry’s Chocolate Orange – cut into small chunks!


What you have to do..

Cream the sugars, butter and egg together. Then add the vanilla. Add the flour and Buttons/Smarties then mix.


Split the dough into walnut sized pieces and place on a lined baking tray. Remember to leave space between the cookies, they will grow!


Bake for around 8 minutes at 180c for the perfect American cookie!

Christmas all wrapped up

Now we only have 37 days to go till Christmas day, yes I am counting! I wanted to share some of my own ideas to help you with buying and wrapping the perfect gift. I love Christmas, it’s the best time of the year, but it’s also the time of year that can worry a lot of people because of one thing “money”. Christmas to me isn’t about the presents, it’s about family so if you’re on a tight budget don’t feel bad, one small gift can mean more than loads of presents!

When you don’t no what to buy.

Hampers ~ I love making hampers up for people when I can’t make my mind up on what to buy, you can can fill them with anything from beauty products, spa/relaxation or even food & drink. Hampers can work out expensive so always have a price limit! Here’s my beauty hamper ideas to keep the price low but still have the wow factor!

When I make beauty hampers I buy most of the products from TKMAXX you can buy O.P.I, Nails ink and Butter London for half the original price! They also stock some American brands that you can’t get here in the UK; this cuts the cost down by a lot!

If you are buying for a person who loves baths then LUSH is perfect! I buy a few separate bath bombs, soups and bubble bars to fill the hamper out! Candles are another perfect gift for relaxation try TKMAXX and their sister store Homesense, you can get candles for less than £5! Or try local independent stores like HOBO soy candles where prices start from around £8.50.

Top Tip! ~ Before I go christmas shopping I will always have a list with me, it will have everything I’m getting for everyone and the things I need such as wrapping paper, tags and bows. And once I’ve brought something I will write the price next to it so I can keep track of how much I’m spending.

Gift wrapping is usually always an after thought but to me a perfectly wrapped gift is just as memorable as the gift inside. If we have spent our money on whats inside, shouldn’t it be wrapped in a special way? But it doesn’t have to cost a lot, here are my tips and tricks for wrapping the perfect gift!
Wrapping paper ~ I will always spend a little bit more on wrapping paper, some cheap brands can rip from being so thin! Always look for a thicker paper.
Bows and all the trimmings ~ Bows, tags and ribbons can cost a lot so why not use string or Washi tape? Some stores sell bows and ribbons in big packs they’re a good way to save money!
Gift boxes ~ This is a perfect idea for hampers, use old subscription boxes and wrap them in festive paper then use tissue paper inside or buy a memory box. A memory box is a little more expensive but you know they can keep it forever.
